The distinguishing mark of any flank steak is it's cross-grain—of course, as well as it's mouth-watering taste! The flank steak is a large, flat cut that's lean and boneless with lots of intense beef flavor. Best when marinated and grilled or sliced thin (against the grain) and stir-fried.
